Just finished a photo shoot for a pie book, and stole a chance to take a phone pic with some professional lighting! Gosh, I wish all my pics could look this elegant and pretty. Anyway, for the book, I decided to go with a cream pie. Instead of piping or billowing a mound of chantilly atop the butterscotch pudding, I went quenelle happy and strategically placed different sized quenelles all over. Dotted with caramelized banan slices and micro lemon balm, it sort of looks like multiple sunrises among a hilly landscape. A passer-by even thought it looked like a basket of eggs.
Never considered myself a cake lady, but the ones I make do seem to be crowd pleasers. This was just a little last minute six incher for a special guest in the dining room. Almond sponge, vanilla mousse, lemon cream, all encased in a band of white chocolate embossed with colored cocoa butter. The top is decorated with quenelles of creme fraiche, mixed berries, and raspberry macarons. The circle theme is continued in the white chocolate 'happy birthday' plaques. Very cute, very fun, very pretty birthday!
